Eggplant Involtini with mozzarella and iberico ham

For this edition of the foodista challenge, Maman pâtisse set up a nice challenge for us this month. Bringing us in the south of Eutope, in a country where the food is simply delicious ! Italy, a country where dishes that are as original and as delectable as the next. A cuisine known all over the world.

I love pasta and pizza of course, but italian cuisine is definitely more than that. So today, I am glad to share with you a recipe that I truly find wonderful : Eggplant involtini. And to bring together 2 countries in the same plate, I added some Iberico ham to replace the traditional Italian Parma ham.

Involtinis d’aubergines, mozzarella et copeaux de jambon ibérique

Ingredients
  

  • 2 aubergines
  • 200 gr. de mozzarella
  • 100 gr. de jambon ibérique
  • gros sel
  • poivre
  • huile d’olive
  • 25 cl. de coulis de tomate

Matériel

  • mandoline
  • cures dent

Instructions
 

  • Trancher les aubergines très finement dans le sens de la longueur à l’aide d’une mandoline.
  • Les mettre dans un plat, saupoudrer d’une cuillère à café de gros sel et laisser dégorger au moins une heure voire toute une nuit.
  • Faire chauffer une cuillère à soupe d’huile d’olive dans une poêle, y faire revenir les tranches d’aubergine, une par une.
  • Mettre des copeaux de jambon ibérique et un peu de mozzarella à l’extrémité d’une aubergine. Rouler et piquer avec un cure-dent.
  • Mettre dans un plat allant au four.
  • Préchauffer le four à 200°C. Enfourner pour 5 minutes et servir avec un coulis de tomate.
