Carrot & mandarin pumpkin soup recipe

Thanks to Hélène of Rock The Bretzel, I was hosting the Battle Food for the first time. So nice ! And this is with great pleasure that I nominated Sonia of frambuesaskitchen.com to host the next event ! I loved her millecake. Was splendid ! And the new theme for this month is “monochrome cooking”. Not so easy right ! But so challenging. I gave up and made a delicious soup. But still I got two orange ingredients and one texture !

Obviously mixing all the ingredients together has given me a great orange monochrome !

Carrot & mandarin pumpkin soup recipe

Ingredients
  

  • 900 gr. of mandarin pumpkin
  • 400 gr. of carrots
  • 1 onion 120 gr.
  • 1 potato 200 gr.
  • 3 l. of water
  • 2 cc. of sea salt

Instructions
 

  • Peel, cut and seed mandarin pumpkin. Peel and cut carrots, onion and potato.
  • Add all vegetable on a large casserole dish and cover with 3 dl. of water. Add sea salt and cook for 40 minutes to 1 hour until vegetables are ready. Put a knife in the different vegetables and if it’s going smoothly then vegetables are cooked !
  • Blend and serve.
