Crusted salmon with old style mustard and fresh tarragon

I used to eat a lot of seafood as a child. Living in Montpellier, I was really close to the sea and eating fish, shellfish and crustaceans was common and usual.

However since I live in Switzerland, it is not so easy to find the kind of seafood I want. In my local supermarket, products you will almost always find are cod, shrimps and salmon. You can find other fishes of course; but to be honest I do not always really know where to begin, how to prepare them. To top it all off, they often block internet in supermarket so if you want to quickly find a recipe to get an idea of what kind of vegetables or others products you may need… you can’t.

As a result this is quite difficult to find continuously new ideas to make fish. You kind of get bored.

I promise I will try to find a good fish market. Manor is quite good and they told me I can order. So I think I will do so next time I want to make some seafood.

In the meantime, I used salmon today. I made this crusted salmon recipe with old style mustard and fresh tarragon. Delicious and surprising! I am convinced you can decline this recipe with other fish species.

Ingredients
  

  • 4 salmon pave
  • 4 tablespoons of breadcrumb
  • 2 tablespoons of old style mustard
  • a pinch of salt
  • a pinch of pepper
  • 2 teaspoons of tarragon

Instructions
 

  • Preheat oven to 200°C.
  • Mix breadcrumb, old style mustard, tarragon, salt and pepper.


  • Put salmon in an oven dish. Cover each salmon pave with this mixture and bake for 15 to 20 minutes.
  • Serve immediately.
