Beef shank with orange and cumin

Mamie Monette’s recipe : beef shank with orange and cumin. Julie loved it. She tasted it at my grand-parents’ place after our two days trip in Paris. Just Girls! Was awesome!

If you follow the blog on instagram, you saw that we stop by Dessance restaurant in the Marais. We also shop around and bought many delicious things in the little boutiques around our rented appartment, and we even had the chance to attend Julie’s : “Rolls galette” (yes, we are still talking about food hahaha).

Usually you should use beef cheek, however my granny couldn’t find some, so she slightly changed the recipe and anyway beef shank is also very tasty.

Ingredients
  

  • 2 tbsp olive oil
  • 2 onions
  • 2 beef shank
  • 2 tbsp white wine
  • 1 carotte
  • 2 oranges
  • 1 pinch cumin
  • salt
  • pepper

Instructions
 

  • Heat the olive oil in a cast iron casserole and return the finely chopped onions. Reserve the onions.
  • Brown the meat on both sides. Deglaze with white wine. Add the onions, the grated carrot, the zests of an orange and the juice of the two oranges.
  • Season with a pinch of cumin, pepper and salt.
  • Cook over low heat for about 2h30.
