Julie's mini crepe or sourdough pancakes

Soon it will be the candlemas, I am like a child. Candlemas isn’t just a day when we eat crepe but the birth of my daughter : Julie. So I am dedicating her those mini crepe that we are gonna eat together.

Julie's mini crepe or sourdough pancakesOn the day of the birth, I watched the time, the moments when I was still in condition. Arrived at 20h in the hospital, I wondered if she would be among us the 1st as her great grandmother or the 2 for candlemas day !

For several months, we have a newcomer in the family (in addition to Julie). Our sourdough that I nicknamed Alfred. It seems that when you speak to your sourdough, he becomes more cooperative. So I told myself that if I gave him a name, it would be much easier to talk to him! On the other hand, this yeast must be fed, so much so that I found myself with quantities not possible and all that even by making a pizza dough a week. And yes every Sunday night, it’s pizza night at home :)! A girlfriend told me that maybe I could use the surplus to make pancakes and here we are with this recipe of mini-crepes or sourdough pancakes!

Ingredients
  

Sourdough

  • 60 gr Sourdough chef
  • 60 gr water
  • 60 gr flour

Crepe dough

  • 250 gr flour
  • 40 gr melted butter
  • 3 cs sugar
  • 3 oeufs
  • 5 dl lait
  • 1 pinch sugar

Instructions
 

  • Prepare your little sourdough about 24 hours before making your pancakes. Mix 60 g of main sourdough with 60 gr. of water and 60 gr. of flour. Let it bubble for about 12 hours.
    Prepare your pancake dough. Pour the flour into a bowl with a pinch of salt. Make a well. Add eggs and beaten butter. Mix by making large movements to aerate the dough and obtain a homogeneous paste.
    Add your sourdough. Then pour the milk little by little while mixing to avoid making lumps.
